Short of doing a complete property search, it is not easy to pinpoint the date that Cedar Creek Cheese Factory was actually built. Structures built before the days of building permits are not recorded in the registry offices - only the land sales and changes are traceable. As with so much of our history, we are grateful for 'the human factor'.
Previous to the ownership of Mr. and Mrs. Sam Hobbs, the factory belonged to Mr. Horace Way, who according to Mrs. Edith Way (his daughter-in-law) bought the property stretching back to the Third Concession, in 1899; she believes that the building was in place at the time but was perhaps not a factory, and that it was remodeled for the purpose of cheesemaking. Mrs. Way visited her in-laws at Cedar Creek many times while living in Detroit, where her husband Lisle worked, but when his health failed the family returned to Cedar Creek. He and his mother died at Cedar Creek on the same day, and Edith stayed on at the factory to help look after things, during the years 1936 - 37. Although this was a sad and difficult time for their mother, daughters Rene, Dorothy and Yvonne remember many happy times. Rene, (now Mrs. Gerald Simpson) remembers the busy factory and being occasionally allowed to weigh out cheeses; she liked to help herself to the 'starter'; and take cores from the cheeses in the curing room at the north end of the building for taste-sampling. At that time, this all-important room was lined with shelves full of curing cheeses and cooled by huge blocks of ice cut from the nearby pond in winter, which were placed around the perimeter walls of the room. She has good memories of the skating parties on that same pond when friends and neighbors came and her grandfather would light the fire in the bunkhouse so that they had somewhere to go to get warm. In summer, she and her sisters would run up the hill to her uncle's farm to play - and once, she used a six-quart basket of fresh eggs to make mud pies. They were also allowed to use an old cheese vat for a swimming pool, and she particularly loved sleeping in her bedroom under the eaves to the sound of the rain on the roof, and the feeling of safety and security there.
Mrs. Way remembers that the hydro was installed in 1930, and that after the new electric lights were installed, the first two new appliances were an electric cooking stove and the all-important washing machine. She also recalls that an Imperial Oil gas pump was installed about that time for the convenience of motorists, who were becoming more numerous as mass production brought cars onto the market which were cheap enough for the average man to afford - and just about everyone wanted one. Still, all recollections cannot be happy, and the death of her husband Lisle and his mother happening on the same day must have been a particularly traumatic time. They were laid out before the funeral in one of the upstairs bedrooms, a customary practice in days when home funerals were very much commoner than today.
Cedar Creek Cheese Factory - a place of work and home, with many untold memories of days that will never return - a pity that those old walls can't talk. Happily, there are still some people who can, and I hope that some of them will leave a written record to share with generations not yet born, who will want to know about life in "The Good Old Days,'' at Cedar Creek.
For Mrs. Margaret Hobbs, the rambling clapboard building on Highway 30 near Hilton is not just a retired cheese factory, it's also her home. Tucked snugly under the eaves of the old building are surprisingly spacious living quarters, consisting of a large living-room, kitchen-dining room, several bedrooms and any amount of smaller rooms for extra accommodation or storage. A coal-burning stove sits quietly at one end of the living-room radiating welcome heat into the room, while a large cookstove dominates the kitchen. Margaret Hobbs has the best of both worlds - the comfort of yesteryear and the convenience of today. On occasion, she has fed as many as twenty-four people at her table. "One Christmas", says Margaret, "the stoves and I sure were hopping, - it was the year when the highway went through and the McFarlands and their men were here as well as our own and the family". As a token of thanks, she was presented with a beautiful glass plate, which she still holds in high esteem and obviously cherishes.
Cedar Creek Cheese Factory has been Margaret's home since 1941, when she and her husband Sam bought it from the estate of Horace Way, for whom Sam worked as a Cheesemaker, First Class. Sam and Margaret had eleven years of previous experience at Brae, about six miles east of Campbellford, and at Fenella before that, and the great attraction of Cedar Creek for them was summed up in one word - electricity. The factory at Brae didn't have it, and Cedar Creek did, since 1930, eliminating or at least easing, some of the more arduous chores. The Hobbs' operation boasted three large vats for making the cheeses, and electricity meant that the milk-and-starter mixture could be "paddled" mechanically instead of by hand, and the whey could be pumped upstairs for further processing. But even with electricity, cheesemaking was hard work, keeping two hired men and Sam Hobbs busy fulltime, from making the starter (using rennet, containing rennin, a milk-curdling enzyme necessary to form curds), right through to pressing the cheeses into 95 lb "hoops" from which they emerged wrapped in cheesecloths ready for maturing, and then shipment to domestic markets or overseas. As today, government inspectors were apt to arrive at any time, to ensure that health and cleanliness regulations were being kept, and to test the quality of the finished product by taking core samples of the maturing cheeses in the curing room. In addition to these 95 lb. round cheeses, others of varying sizes were made for the area farmers, usually in the fall, and fresh cheese curd was also produced.
The two or three hired men usually lived in their own bunkhouse to the rear of the factory (it is still there) and cooking their meals, washing their clothes and bedlinens was part of Margaret's job, as well as working in the factory when needed. The washing was a big job and had to' be done every day, since the men wore white clothing and aprons while working and everything had to be kept meticulously clean. This included the three large vats, the starter vat, milk tanks, hoops, separator and milk paddles - everything that came into contact with milk. The enormous amount of water necessary for this was pumped from the nearby pond and heated in a huge cast-iron boiler encased with brick, which is still in evidence in an adjoining room. The cheeses' final resting place before shipment was the curing room, kept cool by an overhead refrigeration unit, a great improvement installed by Sam after he took over operations. With thick exterior walls and an enormous door nearly a foot thick, this must have been a pleasantly cool place to work on a hot summer day, and years later when it was unused Margaret and Sam enjoyed its cool comfort as a summer kitchen by the addition of some furniture and houseplants, of which Margaret is very fond.
Unfortunately, Sam's health began to deteriorate and he even became allergic to the rennet starter, and so in 1955 he was forced by circumstances to cease operations. In later years he worked as a school custodian, as perhaps some of the pupils and teachers at E.N.S.S. will remember, and he also worked for the hydro company. However, the factory was still their home and they continued to live there through the years, until Sam's death in 1978, on July 3, his birthday. Margaret stayed on, but is not alone very much - she has many friends and neighbors who visit her often and keep 'an eye' on things. She is also a member of two senior citizens clubs, enjoys the social activities at the Codrington Community Hall, and enjoys taking trips around the community and farther afield. After many years of hard work, she fully appreciates having an easier life "We really did work hard in those days," she says, "sometimes we hardly took time to eat, and, as long as the milk came in, we had to make cheese. One time, when there was a strike on, we had so much milk come in that we only had about three hours' sleep a night, we ate sandwiches as we worked, and we did that until the strike was over - we were all worn out by that time." No wonder that she enjoys taking things easier these days.
Small cheese factories such as Cedar Creek used to be an integral part of the local economy and a valued source of income for the area farmers, but things have changed quite drastically in the last decade or so and there are now only a few where there were once many. Whether this is of overall benefit is perhaps debatable, but it seems a pity to allow such an important industry to sink beneath the sands of time without a trace. It is a hopeful sign, therefore, that an attempt is being made to at least provide a written or filmed recognition of the industry in this area. Mr. Don Pollock of the Dairy Inspection Branch of the O.M.A.F., Stirling, is trying to pinpoint all of the old factories that were once in existence here, and it is the Central Ontario Cheesemakers' Association's intent to make a film with this in mind. It is hoped that they will have a filmed map with all the cheese plants marked in time for display at the International Ploughing Match to be held in Stirling in 1986.
